The juice for this is bled from a 5hl cask of fermenting Brunello with the intent of concentrating that cask. Making this essentially Brunello Rose! After fermentation completes the wine is bottled unfined and unfiltered giving us a sappy, snappy, crunchy, pomegranate, cranberry and zesty rose singing with the quality of its biodynamic fruits.

The Piombaia company is located in the heart of the area of historical production of Brunello di Montalcino, with 12 hectares of vineyard that extend around the winery "Piombaia", to the southwest of Montalcino, on the road for Sant'Angelo in Colle, and around the "La
Crocina ", located on the road from Montalcino leads to Sant'Antimo. Both are owned of the Rossi-Cantini family. This is one of the highest areas of Montalcino.The vineyards are located at an altitude that varies from 400 to 600 m.s.l.m - the second highest in teh denomination. They favor the production of elegant, ethereal, suitable wines with a long refinement in the bottle. Piombaia has started its own for some years conversion to biodynamics, with the aim of safeguard the harmony between nature, the earth and the men and to promote soil fertility and vitality, of flora and fauna in the vineyards.

The fermentation cellar is strategically located in the middle of the vines, so as to guarantee the least stress possible to the grapes that are transferred to the cellar after after harvesting. The cellar holds the grapes in stainless steel vats and the aging cellar holds the tonneaux (500-liter oak barrels) that are perfect for the long aging of Brunello di Montalcino. The entire cellar is temperature controlled, but without special technologies, to remain faithful to the wine making tradition of the area.

Piombaia is managed by Roberto Cantini and his sons: Vittorio, who takes care of the farm and is involved in the production of wines, Francesco who is an agronomist, and Cecilia, who takes care of the marketing and communication aspects.
