The result of Adam's desire to investigate the influence of carbonic maceration on this Stellenbosch Chardonnay's texture andaromatic profile. Half of the grapes were whole-bunch pressed, lightly settled and then transferred to neutral oak barrels for fermentation and maturation, whilst the other half were locked down under gas cover in a concrete fermenter to undergo their miraculous transformation.
After deliberating for some time on how much of this carbonic component to include in the final bend Adam settled on 20% - contributing just enough cut and texture to the final wine without detracting from the classic nature of the variety.

Only 712 x 750ml bottled. This was aged for 9 months in neutral (invisible!) 500L barrel.

With a lengthy, successful stint at Klein Constantia under his belt (amongst other things), Adam Mason is currently Mulderbosch's head winemaker and is one of South Africa's established vinous stars. These wines are made from a selection of unique vineyards that have become known to Adam through his travels around the Cape?s vineyards and are produced in limited quantities, making them indeed rare examples of some of the Cape?s most interesting vineyards. It is small batch, experimental wines like these that are at the forefront

"Raised by Wolves is the brainchild of Adam Mason, winemaker at Mulderbosch Vineyards. The name is a parody of the constant one-upmanship of winemakers: "My wine is a single vineyard." ... "Yeah, well my wine is naturally fermented." ... "Oh yeah, well my wine is hand sorted by berry." And Adam's response: "Well my wines are all of the above, and I was raised by wolves."
The Raised by Wolves wines are all vinified with minimalistic intervention to allow the true character of the varietal and the site-specific terroir to shine through."
