Thomas Chisolm, who grew up in Norway and Rupert Waites from Canna originally worked together at Browns on George Street in Edinburgh and found that shared a love of great quality cooking, the great outdoors and foraging for and cooking with unusual and oft forgotten Scottish botanicals. After a period away from the restaurant they teamed up again in 2011 to form Buck & Birch pop-up to create wilderness inspired liqueurs.

With five years of experimentation and refining Thomas and Rupert launched Aelder in Novemeber 2016. scotch base - blended with berries and botanicals syrup Elder berries, hogweed seeds and other wild Scottish botanicals which have been forgotten. launched nov 2016

Goes well in prosecco to form an Aelder Royale (Aeld - Saxon/Norse for fire) -
